Chef’s Corner…great addition to your cheese board
Spice up your favourite cheese with this great chutney recipe…easy to do at home and it makes a lovely addition to the cheese board when entertaining guests.
Apple & Onion Chutney
6 Granny Smith apples, cubed with skin on
6 red apples, cubed with skin on
3 handfuls of soft brown sugar
red wine vinegar
2 handfuls of castor sugar as required
4 small onions, diced
3 handfuls of raisins
1 tsp mixed spice
Quarter apples, then slice into thick matchsticks, then cube
Dice the onion
In a heavy bottomed pan, place the apple, onion & enough vinegar to come half way up the mix. Add the sugar & spice & bring to the boil then simmer for about 1+hr until the mixture is jam like. Add raisins towards the end with the castor sugar as required.
