400g unsalted cubed butter
3 beaten eggs
450g demerara sugar
337g plain flour
15g baking powder
- Lightly beat sugar & butter
- Add beaten eggs
- Add flour
- Add raisins & oats
- Roll into cylinders that fit into a plastic container
Remove from freezer to soften slightly, cut to size, 175O, for about 12mins
TOP TIP – Don’t over mix so it stays firm enough to roll and then freeze
